		<description>I think coconut is smelling than olive oil.Of cause coconut can make tasty but it has to use pure special source coconut plant area.But olive oil is healthy than coconut, and it normal use as patient food in height pressure disease too!!!

i would not use coconut oil - it can be an overbearing flavor.
try butter.  melt it and let it cool for a bit.  add it before you add the eggs and water and make sure it is fully incorporated before you add the water, then eggs.
you could also use apple sauce or apple butter.  applesauce will NOT affect the flavor.
you could also use mayonaise (not miracle whip).
