I have a cookie recipe that calls for 2 cups/4 sticks of butter and would prefer to use coconut oil in the recipe. I know many peole use coconut oils as a substitute. Logic tells me that 2 cups of melted butter is equivalent to 2 cups of coconut oil, but I don't know if there is there a special formula to determine how much oil I should use? I don't want soggy or crispy cookies!
As a sidenote, I have both "regular" coconut oil and the expeller-pressed (oil w/o the coconut flavor)...don't know if it matters, but I was going to use the flavorless oil instead.

EDIT: (To N F + asker) Yes, it does have Omega 3 fatty acids, which are unsaturated fats (lowers Cholesterol). However, that doesn't change the fact that it is almost 100% pure SATURATED fat, which is horrible for you~!! Even the American Heart Association remindes us that coconut oil is actually detrimental to our cardiovascular systems and promoted heart disease. The best source of Omega 3 Fatty Acids is from fish and flax.

I just bought coconut oil, and from what i've read it should be solid unless it is in a room above 80 degrees.
But in my house it is like 74 degrees or something, and the coconut oil is liquid.
Is something wrong with it? Should i put it in the fridge? This is high quality, organic extra virgin coconut oil.

If you are talking about in food, it is bad for you. Any packaged foods with tropical oils is not good for the heart.
If you mean to use it externally,like in a sunscreen lotion, or for softening your hands, etc, then it would be a very good choice.

Don't use a lot, just a little bit! I use olive oil in the morning after I've dried my hair, it smooths away frizzies. By a little bit, I use about a "dime" size (cup your hand and just pour a little into your hand...then rub your hands together and rub through your hair). You can always add more if you want, but if you use to much, you'll get the greasies.
You don't need to rinse it out...leave it in, it doesn't do any damage.

I am baking a coconut cake for Christmas, and in it's reviews many people said they used "cream of coconut" instead of vegetable oil. I look all through the store, and found coconut extract, and cans of coconut milk. I haven't opened the coconut milk yet, but when I shake it, it feels almost solid. You can't hear any sloshing. Is this the cream of coconut that they are talking about? And does anyone know if that would work better than oil?
